Tv chefs open's new restaurant in Tivoli

02 Feb 2012

Tv-chefs Adam and James Price and their business partners from Dragsholm Castle have signed on to open their second restaurant, this time with Danish cuisine, in The Glass Hall at Tivoli, formerly home to The Paul, a one-star Michelin restaurant.

‘Eating with the Prices’ is a popular Danish tv show where the two brothers Adam and James Price cook their favourite dishes using family recipes, fancy appliances and ‘lots of butter’, which has become a popular saying in Denmark.

The Price Brothers come from a family of actors, dancers and mimes, known in Denmark through generations. Adam is also an author of several successful tv dramas and was for many years a leading food critic in Denmark. James is a popular conductor and composer. Among his many achievements are four ballet scores for Tivoli’s Hans Christian Andersen/ Queen Margrethe ballets.

“When Tivoli offered us the amazing opportunity and the outstanding rooms in The Glass Hall, we were excited and ideas began to pop. It makes perfect sense for us to open in Tivoli – not least because of the Price family’s more than 160 years joint history with the old gardens. Actually it was Tivoli who outmatched our ancestor’s theatre on Vesterbrogade in the 1840ies. The Price family then moved in to Tivoli and became the stars of the Pantomime Theatre. Opening a restaurant in the old gardens almost 170 years later can be seen as our way of saying, “ if you can’t beat them – join them,” explains Adam Price.

‘Toungue-in-cheek’ Danish classics

The menu at the Price Brothers’ first restaurant in downtown Copenhagen clearly reflects the brothers’ love for the French and Italian classics. In the Tivoli restaurant, the style of the food will be different with a focus on traditional Danish dishes made from Danish produce.

“Our intention with the Tivoli restaurant is that the style of food shall be influenced by our love for the classic Danish cuisine. At lunch we will arrange ‘smørrebrød’ made from the best Danish ingredients and made according to tradition but at the same time leaving room for innovation. In connection with the lunch menu we would like to reintroduce some of the stunning cakes which were formerly served in the Tivoli patisserie – The Tivoli Cake, The Potato Cake and the Napoleon Cake”, explains James Price.

The evening menu will offer beloved Danish dishes that most Danes have a relation to or a memory of. Shrimps - when the shrimps are at their best - and asparagus - when asparagus are in season. Steak, salted beef brisket with horseradish, Danish summer buck, croustades with shellfish fricassee, whipped cream and jam in cones and much more. The decor of the restaurant will take the guests back to the Price family’s history in Tivoli and also the entire tradition of the Pantomime, the Commedia dell’Arte and all the fun of the fair.

Lars Liebst, CEO at Tivoli, comments on the collaboration

“The Price Brothers are members of a family who has enriched Denmark through generations  with music and fiction as well as the appreciation of good food. In Tivoli the Price family has been involved in the Pantomine Theatre. When unique opportunities arise and in this case reache back in time as well as into the future, you jump at the chance. The Price Brothers restaurant is that kind of opportunity.”

The Price Brothers restaurant opens 12 April 2012.

About The Glass Hall

The Glass hall was originally Tivoli’s concert hall from 1863. Since 1902 it has been used for theatre, cabaret etc. Many of the greatest Danish artists and international artists have performed in the Tivoli Glass hall.
The building was completely destroyed in 1944 through Nazi sabotage. Famed Danish architect and designer Poul Henningsen (PH) reconstructed The Glass Hall in 1946 and added the restaurant. Most recently The Paul with chef Paul Cunningham ran the restaurant which the Price Brothers will now take over.
