Denmark's Oldest Castle Has Been Renovated
One hour drive from the Little Mermaid in Copenhagen you will find another fairytale - the one of Dragsholm Castle - the oldest secular building in Denmark. During the past six months the rooms and gourmet restaurant have undergone careful renovation with a sense of history and in tune with the original interior, but with all modern conveniences added.
A visit to the newly renovated Dragsholm Castle holds an array of experiences. The castle is the oldest in Denmark and has an impressive and dramatic history reflected in the beautiful rooms, salons and ballrooms. The surroundings of the castle offers activities such as golf, hunting, and lovely walks in the landscape, forest or on the beach. Also a number of other interesting sites can be found around the castle, among these the Church, the Castle Theatre and the Dungeon. But the best experience is Dragsholm's gourmet restaurant Fadeburet.
Old Castle - New Gourmet Restaurant
In connection with a stay or dinner at the castle, guests will experience the high culinary standards, superior service and luxurious rooms. Since June 3rd the castle has become the oldest castle in Denmark with the newest, very high standard, gourmet restaurant. During the past six months the restaurant has been carefully renovated. The ambition has been two-fold: To respect the rustic vaults of the old cellar and an ambition to provide the ideal conditions for gastronomic expression and culinary treat.
The gourmet restaurant is situated in the basement of the castle's southern wing - historical home to the original kitchen of the castle. The kitchen is pivotal to the restaurant and the menu reflects the local produce from the Lammefjord and surrounding lands. The philosophy behind Dragsholm's restaurant is dedicated to quality. Menus are composed in accordance with the seasons, and the single dishes all contain unique taste impressions. This guarantees an overall thrilling and sensational experience. In the castle kitchen, Dragsholm's history and atmosphere blend with aesthetics, quality and the taste of nature.
Local Produce and Home Grown Vegetables
The kitchen is open to all sides, enabling the restaurant guests to observe as chef Peter Steen Sørensen prepare and interpret local produce to classical Danish gourmet with a touch of French finesse. Vegetables are delivered fresh from the castle's own fields, where the rich soil of the Lammefjord ensures premium root vegetables. The high ambitions are in stark contrast to the low-ceilinged restaurant:
- To the widest possible extent, we seek to cook everything from the bottom, and we cook several stocks and bake our own bread and cakes on a daily basis. The overall connection of produce selection, the careful preparation and the art of skilful presentation all have to form a harmonized whole, says chef Peter Steen Sørensen.
Denmark's Oldest Wine Cellar
Dragsholm Castle is furthermore home to Denmark's oldest wine cellar, which can be dated back to the 13th century. At the time mead and fruit wine was stored on the shelves, while today the cellar is burgeoning with wines from all over the world. The cellar has a total of 6,000 bottles from an array of countries, houses and châteaux.
